The “Foglie di Ulivo” or “Olive Leaves” are a particular type of pasta that owes its name to the elongated shape, similar to the leaves of an olive tree. It is a tasty and captivating pasta that call to mind the olive leaf also for the color: one of its sides, in fact, is green in color, obtained in a natural way with the addition of spinach to the dough without resorting to the use of food coloring and preservatives. Its sides, the smooth one but most the rough one with veins, that allows to absorb and hold condiments. They are made with durum wheat semolina, water, 2% dehydrated spinach powder.
It is short pasta obtained from quality ingredients processed in accordance with tradition, with procedures capable of maintaining the taste of homemade pasta. The extrusion process is carried out with the bronze die, suitable to give pasta a greater roughness and therefore to better absorb and hold condiments with which it is served. The “Olive Leaves” are perfect to serve with a simple sauce based on fresh tomato and basil. Also excellent with more elaborate sauces (vegetable creams, black olive pâté, tuna, mushrooms, asparagus pesto, etc.).
